Some little-known facts about Chocolate Castle:

The animals' names are: bear = mogwash, dog = rufus, pig = tabetha, rabbit = misty. The cat's and snake's names have not been disclosed so far.

You can draw glitter patterns on the level selection screen, just click & drag the cursor over the castle!

The "Puzzle completed" animation sometimes contains black balloons (maybe they have some special properties?). You can push balloons out of the way with the mouse.

Clicking the top castle flag on the level selection screen shows some player statistics for the current level set. The score is the sum of moves used in all level solutions.

Starting with version 1.02, Shift-L toggles the black line between the playing field and the menu.

The animals sneak glances at their chocolate if it is next to them.
- There is a waffle cake brand in the Ukraine called "Chocolate Castle" (Ukrainian: Шоколадний Замок). I was given one recently. Here's a picture of the packaging, it's the strawberry variety:

The black balloons appear once in every 10000. Except if you eat an animal using the snake (which is never necessary to complete a puzzle), in which case all of them are black to mark your shame!
Eating animals may not be necessary to solve the rooms, but it is if you're going for optimal solutions. In 5 Medium, I can only save 2 of the 6 bunnies in 4 moves -- the critter-friendly version requires 14 moves. Oh well, snakes get hungry too.
26 Hard is the only other room of the 120 where it's possible to eat an animal and complete the level; 7 bunnies are present for the sole purpose of being avoided or eaten. That means snakes can eat an unlucky total of 13 animals in a finished game.
I find it interesting that there's room for a seventh rabbit in 5 Medium; did the snake have a snack before we entered the room?

I just wanted to add my contribution to this trivia: At the title/room selection screen you can see three 3D chocolate squares floating in the sky, at the bottom-right of the screen just above the mountains.

If you wait long enough on the level selection screen, you might see a shooting star. They happen on the title screen too, but because it's daytime it's harder to see.

Chocolate Castle was originally called 'Cheeseboard', and had different coloured mice eating different types of cheese.
- The flags on the title screen used to show the wind blowing right. They were flipped so that the balloons coming out of the window could be carried off to the left.

The 3D cloud-square motif is also present in Neko Puzzle's title screen, where it's much less subtle. With the white title overlaid, it's even more reminiscent of Turtleheart's link.

During play, the small picture of the castle is horizontally flipped (look closely at the trees and mountains), but the flags are still waving to the left. Either that was carefully planned to make the reversal less obvious, or the source image was taken before the wind change Lexaloffle mentioned above.

On the level selection screen, your cursor causes nearby windows to light up, not just the one you're hovering over. This even works when you're not over any particular window; try hovering over the central doors to get a good look at the effect.
- The buttons on the title screen slide away (and rise up) behind the tree-covered hill in the foreground.
